Lentil Stew Recipe
Serves: 4–6 Preparation Time: 10 minutes Cooking Time: 40 minutes
Ingredients:
1 cup dried lentils, rinsed (brown lentils work best)
1 medium onion, chopped medium
2 carrots, chopped medium
2 celery stalks, chopped medium
3 garlic cloves, minced
2 tablespoons olive oil
4 cups vegetable or chicken broth
1 can (14 oz) diced tomatoes (optional)
1 teaspoon ground cumin (optional)
1 teaspoon paprika
1 teaspoon thyme or rosemary
1 teaspoon salt (or to taste)
1/2 teaspoon black pepper
1 bay leaf
Fresh parsley, chopped, for garnish
Instructions:
Prepare the Base: Heat olive oil in a large pot. Sauté onion, carrots, and celery until softened.
Add Flavor: Stir in garlic, cumin, paprika, thyme, salt, and pepper. Cook for 1–2 minutes.
Simmer the Stew: Add lentils, broth, diced tomatoes, and the bay leaf. Simmer on low heat for 30–35 minutes.
Check & Adjust: Once the lentils are tender, adjust seasoning to taste.
Serve: Garnish with parsley and enjoy this comforting, faith-inspired dish.
Crockpot Alternative:
Put all ingredients in a crockpot except parsley.
Turn on low and cook for 6-8 hours or until lentils are soft.
Adjust seasoning to taste.
For a creamier stew, use an immersion blender to puree some for desired consistency.
Garnish with parsley and serve with warm bread and butter.
